Why is Juane special?
Juane is one of the most important dishes of Amazonian cuisine; characterized by delicious rice seasoned with turmeric, a piece of hen or chicken wrapped in bijao leaves, and served with Amazonian chili, this dish delights the palate of travelers from all over the world.

The origin of juane dates back to pre-Hispanic times, in Putumayo (Loreto), where ancient locals prepared their food wrapped in plantain or bijao leaves over low heat. They called this way of cooking “huanar,” which later evolved into “huane” or juane. This dish is prepared every day throughout Peru; however, it is especially made on June 24 during the feast of Saint John the Baptist, the patron saint of the Peruvian Amazon. Varieties of juane
Amazonian cuisine has changed over the years, creating small variations of juane depending on its geographical location.
- Ancient and original juane: made with grated cassava, fish (generally paiche), mushrooms, sacha culantro, and wild bird eggs.
- Classic juane: made with seasoned rice and free-range hen, hard-boiled egg, and olive.
- Avispa juane: with ground pork, rice, and hen.
- Nina juane: with cooked chicken or hen, sacha culantro, turmeric, and egg.
- Chuchulli juane: made with rice and chicken giblets.
- Uchu juane: made with fish, egg, and chili.
- Sara juane: made with a mix of tender corn, peanuts, and game meat or hen.
